After baked the vanilla cupcakes, I still have some leftover cream cheese frosting. The next day, I decided to try to bake the carrot cake with cream cheese frosting. Carrot cake is always one of my favourite when I have craving of sweet stuffs.
I used the carrot cake recipe from all recipe website (here‘s the link and video). I made some adjustments on the ingredients :
– 3 cup grated carrots (I used 4 carrots)
– 1/2 cup brown sugar
– 1/2 cup raisins
– 2 eggs
– 1/2 cups white sugar
– 1/2 cup vegetable oil
– 1/2 teaspoons vanilla extract
– 1 1/2 cups all-purpose flour
– 1/2 teaspoons baking soda
– 2 teaspoons ground cinnamon
I didn’t add the walnuts as baby Zaanse might not able to bite the walnuts yet. We loved this carrot cake more than the vanilla cupcakes ~ Last weekend, I really made full use of the Tefal stand mixer I bought. We bought it during the promotion … no regret to invest this.
